How do I fade from one colour to another in an object?

For example a red patch on a green apple?

you could use an image map,
a gradient texture,
a shader
or a vertex map to accomplish this....

Open up Viper first.
Apply your base texture or color.
Apply a 2nd layer and then give it some falloff.
Use the postion sliders to move the center of the color spot around.
